The one I use most is a foldable hobby knife from Action.

===== Precision knives =====
These are handy for working in a confined space. I also use them to cut traces in vero boards. The [[https://www.velleman.eu/products/view/?id=348610|Velleman VTK7]] is  nice set to start with. In the Netherlands these knives are sometimes also called scalpels.
